I love Olive Garden's Chicken Gnocchi Soup. Love, love love! In the past, I would gladly eat two bowls of it, about 5 breadsticks, and take my whole meal home! But I've had to skip it since becoming vegetarian and that sucks. So I found a copycat recipe online , and tweaked it to make it vegetarian. (I am so grateful for copycat sites!) Surprisingly enough (not), the original recipe calls for chicken ... I added boiled potatoes to take their place. You could probably cook the potatoes right in the soup - just make sure to add them early enough that they finish cooking before everything else goes soft. That might be too much potato in one soup for some people (is that even possible?). :) You could bump up the amounts of the gnocchi or other veggies in the recipe, or add corn, bell peppers, or soy "chicken" if the extra potatoes don't float your boat. Any other ideas for taking the place of the chicken? Start by chopp...
That is really cute! A cooler is a good idea for work. What do you usually take to eat? If I take dinner 'left-overs' it's always in a re-usable container that is kept in the fridge at work. But often I just take a 'Vegemite and Cheese' sandwich...usually again in a plastic sandwich box that stays on my desk unrefrigerated.
ReplyDeleteI mostly take leftovers (they're quicker for me in the morning) so that's why I started using the cooler. Sometimes I take a sandwich (usually peanut butter & jelly) but I still take it in the cooler because it's habit - I just leave out the ice pack those days.
DeleteI am lucky to be able to go home for lunch most days now, but that is after 20-some years of packing lunches! I still have a (plain) lunch bag for when I need it, though!
ReplyDeleteThat's awesome! I'd love to eat lunch at home :)
DeleteI take a lunchbox. When I was a child, it was always a sack lunch. Now I treat myself to a beautiful lunchbox.
ReplyDeleteHere's my Wordless Wednesday.
A beautiful lunchbox is a nice perk of growing up :)
DeleteThat is a cool one. :) I like the giraffe print on it.
ReplyDeleteHappy WW!
Me too!
DeleteI like the hot pink! I have a cooler bag for when I need to take a lunch somewhere. I used to be enchanted by the plastic lunchboxes with matching thermoses when I was in elementary school.
ReplyDeletePink is my favorite! I had one of those matching lunchbox/thermos sets! Mine was Barbie :)
