A Vegetarian's Thanksgiving

Yesterday was Thanksgiving here in the US, and I thought I'd share what I ate. (I usually get a lot of comments from meat eaters about what I can actually eat at Thanksgiving.)

As an appetizer, we had tortilla chips with salsa and corn dip. I was little worried making the dip because it looked nothing like the recipe picture, but it turned out just fine. Everyone ate it so fast I didn't even think to take a picture. For dinner, I had carrots, vegetarian stuffing, basmati rice, mashed potatoes, corn, vegetable soup (not pictured - but it had vegetable broth, peas, lentils, carrots, and barley), a roll with butter, and cookie dough truffles. My truffles also turned out nothing like the pictures, haha. At least they tasted good :)

Yum! I definitely didn't feel deprived by not eating turkey. I had plenty! And probably too much starch now that I look back over the pictures . . 

How was your Thanksgiving? Anyone going out today for Black Friday shopping? My husband and I are planning to watch a movie, finish wrapping Christmas presents, and organize our closet (we're thinking of changing around the configuration but figured we should clean it out first to be sure).

  1. Glad you had a good Thanksgiving! Strangely, Black Friday is catching on in Canada to some degree even though we have no days off this week!

    1. Thank you! I'm surprised to hear that Canada is doing Black Friday. Traditionally, people here have off Thursday and Friday for Thanksgiving, so a shopping event that begins at midnight makes a little more sense. Otherwise, I don't think there would be nearly as many people shopping!

  3. I could easily do without the turkey we had, I made garlic cheese biscuits, which were probably my favourite, then sliced potato with garlic and butter, super thinly sliced, it was just awesomely yummy! So I have no doubt you did ok. Do you not like your food touching?

    1. Garlic cheese biscuits sound delicious! I'm okay with some food touching - like veggies and rice - but I keep everything separate at first and then mix it up later if I'm in the mood.

  4. Your plate doesn't look very full. We're you saving space for dessert? Which looks lovely by the way.

    I'm not a vegetarian but I can pass on the turkey. Don't like it. Now roast lamb. Love that!

    1. No, it doesn't look like much! I put a small amount of everything I wanted on my plate (plus a bowl of veggie soup), thinking I'd get seconds, but I was too full.

      Lamb isn't very common here, so I've never tasted it. I've never been a huge fan of turkey either ;)
